Job Profile Commis III Baker (Breakfast Buffet Bakery) Four Seasons Resort Mauritius at Anahita Position Information Job Title: Commis III Baker Department: Pastry & Bakery Reports To: Chef de Partie Baker / Bakery Sous Chef / Executive Pastry Chef Location: Four Seasons Resort Mauritius at Anahita Employment Type: Full-Time Position Summary The Commis III Baker is responsible for assisting in the preparation, baking, and presentation of a wide range of bakery products for the daily breakfast buffet operation at Four Seasons Resort Mauritius at Anahita. The role focuses on producing fresh breads, breakfast pastries, viennoiseries, muffins, Danish pastries, croissants, and specialty bakery items while maintaining the highest standards of quality, consistency, hygiene, and guest satisfaction expected of a luxury five-star resort. The successful candidate must demonstrate enthusiasm, discipline, attention to detail, and a willingness to learn while contributing positively to the bakery and pastry team. Key Responsibilities Breakfast Buffet Production Prepare and bake fresh products for the resort's breakfast buffet according to established recipes and standards. Produce a variety of breads, rolls, baguettes, croissants, pain au chocolat, Danish pastries, muffins, brioche, and breakfast specialties. Assist in the preparation of doughs, laminated products, proofing, shaping, baking, and finishing. Ensure buffet bakery displays are consistently replenished and maintained throughout breakfast service. Support the preparation of gluten-free, healthy, and guest-specific bakery requests whenever required. Monitor product freshness, quality, and presentation throughout service. Mise en Place & Preparation Complete daily bakery mise en place according to production schedules. Scale and prepare ingredients accurately. Assist with dough mixing, fermentation, shaping, proofing, and baking processes. Ensure all required breakfast bakery products are prepared in a timely manner. Quality Assurance Follow Four Seasons standards for product quality, taste, appearance, and consistency. Conduct regular quality checks on finished products. Ensure bakery items are presented attractively for guest consumption. Notify supervisors of any quality concerns immediately. Hygiene & Food Safety Maintain strict compliance with HACCP regulations and Four Seasons food safety standards. Practice proper food handling, storage, labeling, and stock rotation procedures. Maintain a clean and organized workstation at all times. Ensure all equipment and bakery areas are cleaned according to departmental standards. Inventory & Cost Control Assist in controlling food costs by minimizing waste and utilizing products efficiently. Follow FIFO (First In, First Out) principles. Report shortages, damaged products, or equipment failures to supervisors. Support inventory counts when required. Teamwork & Communication Work cooperatively with pastry, bakery, stewarding, and culinary teams. Participate actively in daily briefings and departmental training. Maintain professional communication with colleagues and supervisors. Demonstrate flexibility in supporting other pastry and bakery operations when needed. Required Qualifications Education Certificate or Diploma in Bakery, Pastry Arts, Culinary Arts, or related field preferred. Experience Previous experience in a bakery, pastry department, hotel, resort, or commercial bakery is advantageous. Basic understanding of artisan bread production and breakfast pastries. Experience in buffet operations is an advantage. Knowledge & Skills Basic knowledge of bread-making techniques and fermentation processes. Understanding of laminated dough production. Familiarity with bakery equipment and oven operations. Knowledge of food safety and hygiene procedures. Good organizational and time management skills. Ability to work effectively under pressure during early morning operations. Strong attention to detail and commitment to quality. Positive attitude and eagerness to learn.
