What you will do Curate and manage wine, sake, champagne, and beverage pairings for the omakase experience. Recommend pairings that complement the French-Japanese cuisine created by Chef Yannick Alléno and Sushi Chef Itaru Yasuda. Guide guests through beverage selections with detailed explanations of origin, production methods, and flavor profiles. Maintain and develop the restaurant's wine and sake inventory. Coordinate closely with chefs and front-of-house staff to ensure a seamless luxury dining experience. Deliver personalized service to international and domestic guests. Support beverage training for service staff. Ensure proper storage, handling, and presentation of all beverages. What you bring Experience as a sommelier in Michelin-starred restaurants, luxury hotels, or fine-dining establishments. Strong knowledge of wine and sake pairings. Certification such as WSET, Court of Master Sommeliers, JSA Sommelier, or sake qualifications is often preferred. Fluency in Japanese and strong English communication skills due to the international guest clientele. Ability to provide highly personalized luxury service and work effectively in a detail-oriented omakase environment.
